{Recipe} Oatmeal Raisin Cookies

Happy April Fools Day! Did ya get fooled today? Or were you the cheeky one doing the tricking? Mine was pretty alright. Lots of work to be done in uni. Bore! Anyway, I would love a nice camera for my birthday this year. *grins* This one that took this horrid photograph has a few dysfunctional buttons and is almost five years old. Oh well, we can always wish for things that are almost impossible to have, can’t we?

Now, these oatmeal cookies actually taste nicer than they look. It’s my buddy, Cheryl’s recipe. Oh my goodness, I miss you Cheryl! (She went back to Singapore for placements, and for good). Sob. These babies are chewy and oh so yum, minus the sugar. YES! There’s hardly any sugar in it! I also love it because it just takes so little effort to whip up such a satisfying treat.

Cheryl’s Oatmeal Raisin Cookies

1 carb exchange per cookie (makes 13 cookies)

120g wholemeal flour

1/2tsp baking powder

1 egg

110g butter, softened

50g brown sugar

70g oats

100g raisins

1/2tsp ground cinnamon

Preheat oven to 180 degrees Celsius. In a mixing bowl, mix thoroughly egg, butter and sugar. Sieve baking powder and flour into mixture and mix well. Add oats, raisins and cinnamon. Mix thoroughly. Bake for 15-20 minutes or until golden brown. Let cookies rest in tray for about 2 minutes before transferring to a wire rack.
