Penny-pinching healthy stuff

I am a major fan of eating cheap. I am an even bigger fan of eating well and healthy. When I whip something up that is stupendously cheap, obviously healthy and seriously delish, I get this deep silent satisfaction of being able to pinch pennies and enjoy myself in the process. Oh and I could have that wonderfully inexpensive meal slouched on the couch, in front of the television, in my PJs. Hah!

Grilled sourdough, asparagus, poached egg, pan-fried mushrooms and tomatoes, ham, spinach and grilled spiced haloumi. All these for less than two dollars. With no added salt, minimal oil and at least two serves of vegetables, this is definitely healthy eating.
