Steak: One of life’s many mysteries

I have never cooked a proper steak before. It somehow never turns out right. I like mine medium. In my kitchen, it’s usually too rare or too well-done or the wrong cut or ridiculously tough – you get the gist. I have tried grilling and pan-frying and even torching my meat. They just never end up like one of those beautifully juicy and cooked-to-perfection slabs of heaven that you get from a good steakhouse. Maybe this is why I enjoy great steaks so much. I have never cooked it right at home. Now, don’t be fooled by the pretty piece of meat on the plate. It was like chewing tendons. At least the broccollini and braised mushrooms were a hit.

So, what are your tricks for cooking the perfect steak at home?
